If you want a lighter version of this recipe, feel free to leave out the eggs. You can also replace the sausage with other meats.
Ingredients
1 tbsp olive oil
1 large sweet potato, grated
1/4 tsp cinnamon
Directions
- Heat a skillet over medium heat. Add olive oil.
- Once skillet is heated, sauté grated sweet potatoes until tender (a few minutes or so).
- Sprinkle with cinnamon and mix well.
