Try these with sausage topped with fried eggs to keep you full until lunchtime. You can adapt it as you wish by adding other ingredients, such as garlic, mushrooms, and jalapeno peppers. If you want a lighter version of this recipe, feel free to leave out the eggs. You can also replace the sausage with other meats.

Ingredients

  • 1 tbsp olive oil

  • 1 large sweet potato, grated

  • 1/4 tsp cinnamon

Directions

  • Heat a skillet over medium heat. Add olive oil.
  • Once skillet is heated, sauté grated sweet potatoes until tender (a few minutes or so).
  • Sprinkle with cinnamon and mix well.
