This dish is great for those hot summer days. Make up a batch and keep it in the fridge ready to go.
2 cans Albacore or yellowfin tuna
½ cup green and/or black olives, chopped
1 onion, chopped
1 jalapeno pepper, finely chopped
3 tbsp capers, rinsed
½ tsp red chilli flakes
4 tbsp lemon juice
1 tbsp olive oil
6 cups mixed greens (optional)
1 avocado, sliced

Portion out lettuce onto two plates.

In a bowl combine all the ingredients and divide on to two plates on top of lettuce.

Serve with sliced avocado on top.

Serve immediately, or store it in the fridge for a day for more flavour.
